Ingredients
  

  • 4 cups Homemade refried beans or canned is fine too (check out my refried bean recipe!)
  • 4 cups fresh Mozzarella cheese, shredded
  • 4 Large burrito size flour tortillas
  • 1 can cooking oil spray
  • sour cream for dipping( optional )
  • salsa for dipping ( optional )

Instructions
 

  • Prepare the skillet:
    Start by spraying a skillet with cooking spray and heating it over medium heat. This will prevent the quesadilla from sticking and ensure a crispy exterior.
  • Assemble the quesadilla:
    Place one large tortilla onto the skillet, making sure it covers the entire surface. Spread a generous layer of your homemade refried beans on one half of the tortilla, leaving some space around the edges. The amount of beans can vary according to your preference.
  • Add the cheese:
    Next, sprinkle a generous amount of mozzarella shredded cheese over the beans. The combination of melted cheese and creamy beans is what makes this quesadilla truly irresistible.
  • Fold and toast:
    Carefully fold the empty half of the tortilla over the bean and cheese mixture, creating a half-moon shape. Press down gently to ensure everything sticks together.
    Toast the quesadilla on medium heat for about 2-3 minutes on each side or until it turns golden brown and crispy. This will give you that perfect blend of textures – crunchy on the outside, and warm and gooey on the inside.
  • Serve with your favorite accompaniments:
    Once the quesadilla is cooked to perfection, remove it from the skillet and transfer it to a cutting board. Allow it to rest for a minute before slicing it into wedges or strips.
