Ingredients
  

  • 1 lb shrimp, peeled and deveined
  • 1 cup broccoli florets
  • 1 cup halved Brussels sprouts
  • 1 cup chopped kale
  • 1 cup chopped cabbage
  • 1/2 cup curly parsley, roughly chopped
  • 1 cup sliced baby bella mushrooms
  • 1/2 cup shredded carrots
  • 1 cup teriyaki sauce
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (or coconut oil)

Instructions
 

  • Prep the Veggies: Begin by washing and chopping all your vegetables. Having everything prepped and ready is key for a quick stir-fry.
  • Cook the Shrimp: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Season the shrimp with a pinch of salt, pepper, and smoked paprika, and sauté them for about 2-3 minutes on each side, until they turn pink and opaque. Remove from the skillet and set aside.
  • Sauté the Vegetables: In the same skillet, add the remaining tablespoon of olive oil. Add the broccoli florets, Brussels sprouts, mushrooms, and shredded carrots, cooking for about 4-5 minutes, stirring frequently, until they begin to soften.
  • Add the Greens: Stir in the chopped kale, cabbage, and parsley. Cook for another 3-4 minutes until everything is bright and slightly tender but still crisp.
  • Combine and Stir: Return the shrimp to the skillet and pour in the teriyaki sauce. Stir everything together, ensuring the shrimp and veggies are evenly coated in the sauce. Allow it to cook for an additional 2 minutes until heated through.
  • Serve: Remove from heat and serve immediately. This stir-fry pairs perfectly with rice, quinoa, or even cauliflower rice for a low-carb option.
