Equipment

  • 1 Large Mixing Bowl 1
  • 1 Small Mixing Bowl
  • 1 hand mixer
  • 1 loaf pan

Ingredients

  • 1 1/2 cups flour
  • 1/4 tsp salt
  • 1/4 tbs baking powder
  • 1/2 tsp baking soda
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 1/2 tbsp cinnamon
  • 2 cups chopped pecans
  • 2 large eggs
  • 1 tbsp vanilla
  • 1/2 cup milk
  • 1/2 cup vegetable oil

Instructions

  • Preheat and Prepare: Begin by preheating your oven to 300°F. Grease a loaf pan and set it aside.
  • Mix Dry Ingredients: In a mixing bowl, combine the flour, brown sugar, white sugar, cinnamon, salt, baking soda, and baking powder. Stir until well combined.
  • Blend Wet Ingredients: In a separate bowl, beat the eggs lightly. Add in the vanilla extract, vegetable oil, and milk, and whisk until fully incorporated.
  • Combine Wet and Dry: Gradually add the wet ingredients to the dry mixture, stirring until just combined. Be careful not to overmix; a few lumps are perfectly fine.
  • Fold in Pecans: Gently fold in the chopped pecans until evenly distributed throughout the batter.
  • Bake: Pour the batter into the prepared loaf pan, spreading it out evenly. Place it in the preheated oven and bake for 60 - 75 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Once baked, allow the bread to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely. Slice and serve either warm or at room temperature.
