Ingredients
  

  • 1 ½ (64 oz) bottles of Spicy V8 juice
  • 2 cups of chopped or diced tomatoes
  • 8 large potatoes, peeled and chopped
  • 1 pound of fresh spinach
  • 3 tbsp minced garlic
  • 1 tbsp black pepper
  • ½ tsp salt
  • 4 tbsp Badia Complete Seasoning
  • 2 tbsp onion powder
  • 2 tbsp dried basil
  • 2 tbsp dried parsley
  • ¼ cup cornstarch
  • ¼ cup water

Instructions
 

  • Prepare the Slow Cooker: Add the Spicy V8 juice to your slow cooker. This will serve as the base for your soup.
  • Season the Soup: Stir in the Badia Complete Seasoning, onion powder, dried basil, dried parsley, black pepper, and salt. Mix well to ensure the flavors are evenly distributed.
  • Thicken the Soup: In a small cup, combine cornstarch and water, and stir until smooth. Pour this mixture into the slow cooker and stir it in thoroughly. The cornstarch will help thicken the soup as it cooks.
  • Add Potatoes, Tomatoes, and Spinach: Add the chopped potatoes and fresh spinach to the slow cooker. Stir everything together, making sure the potatoes are covered by the broth.
  • Slow Cook: Set the slow cooker to low and cook for 4 to 6 hours, or until the potatoes are fork-tender and the soup has thickened into a creamy consistency.
