Ingredients
  

  • 4 large bell peppers – cored and hollowed out for stuffing
  • 2 pounds lean ground beef – browned and drained
  • 2 cups of crushed breadcrumbs
  • 2 cups Jalapeno Cheddar Goldfish Crackers – crushed
  • 1 can French onion soup
  • 4 cups shredded sharp cheddar cheese
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tablespoon minced garlic
  • 1 tbsp dried parsley

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a baking dish by lightly greasing it.
  • Cook the Ground Beef: In a large skillet, cook the lean ground beef over medium heat until browned. Drain any excess fat and set aside.
  • Combine the Filling: In a mixing bowl, combine the cooked ground beef, crushed Jalapeno Cheddar Goldfish Crackers, breadcrumbs, French onion soup, shredded cheese, parsley, salt, black pepper, and minced garlic. Mix until all ingredients are well incorporated.
  • Stuff the Peppers: Take each cored bell pepper and stuff it generously with the beef mixture, pressing down firmly to fill them completely.
  • Bake: Arrange the stuffed bell peppers in the prepared baking dish so they are snug and stable. Bake in the preheated oven for 30 minutes or until the peppers are tender and the cheese on top is melted and golden.
