Spicy Bacon & Avocado Breakfast Skillet

Ingredients
  

  • 4 large red potatoes, diced and fried
  • 6 leaves of sugar loaf endive, chopped
  • 2 tablespoons jalapeno juice
  • 2 tablespoons hot sauce
  • 8 eggs
  • 8 strips of cooked bacon, crumbled
  • Cheese for topping
  • 2 avocados, sliced

Instructions
 

  • Begin by frying the diced red potatoes until they turn golden brown. This will give them a crispy texture and enhance their flavor.
  • Once the potatoes are nicely fried, add the sugar loaf endive to the skillet. Give it a good mix with the potatoes and allow it to cook for a few minutes, allowing the flavors to meld together.
  • Next, drain any excess oil from the skillet and add the jalapeno juice and hot sauce. These ingredients will add a delightful kick to your breakfast hash.
  • Now it's time to add the remaining star ingredients – crack open the eggs and gently pour them over the potato and endive mixture. Scatter the broken-up bacon on top as well and mix well. Cover the skillet and let it cook on low heat for about 15 minutes. This will ensure that the eggs are perfectly cooked without becoming overdone.
  • Once the eggs are set to your liking, sprinkle some cheese over the top of the hash. Cover the skillet again and let it melt for a few more minutes. The melted cheese will add an extra layer of deliciousness to your breakfast.
