Preheat Oven: Preheat your oven to 300°F (150°C).
Boil Sweet Potatoes: Place the diced sweet potatoes in a large pot of boiling water. Boil for 5 minutes to slightly soften them. Drain and set aside.
Prepare Glaze: In a medium-sized bowl, mix together the 1 cup of raw honey, 1/4 cup of smoky chipotle sauce, 1/4 tsp black pepper, 1/8 tsp salt, and 1/8 tsp cayenne pepper until well combined.
Coat Sweet Potatoes: Toss the boiled sweet potatoes in the glaze, making sure each piece is evenly coated.
Bake: Spread the glazed sweet potatoes in a single layer on a baking sheet lined with parchment paper. Bake in the preheated oven for 15 minutes, or until the sweet potatoes are tender and the glaze is slightly caramelized.
Drizzle with Extra Honey: Once out of the oven, drizzle a little extra honey over the top for added sweetness.
Serve: Serve warm as a side dish or a sweet and spicy treat.
