Ingredients
  

  • 1 package of fresh hoagie or sub sandwich rolls (4-6 rolls)
  • 2 lbs medium shrimp, peeled and deveined
  • Fresh lettuce slices (preferably from your garden)
  • Spicy garlic mayo (recipe below)

For The Spicy Garlic Mayo:

  • 1/2 cup mayonnaise
  • 1 tbsp minced garlic
  • 1 tsp hot sauce (adjust for spice level)
  • 1 tsp lemon juice
  • 1/2 tsp black pepper

For the shrimp batter:

  • 3 cups all-purpose flour
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1/2 tbsp black pepper
  • 1 tsp cayenne pepper
  • 1 tbsp dried basil or Italian seasoning

Instructions
 

  • Prepare the shrimp batter: In a large bowl, combine the flour, garlic powder, onion powder, salt, black pepper, cayenne pepper, and dried basil (or Italian seasoning).
  • Fry the shrimp: Heat a large skillet or deep fryer with oil over medium heat. Dredge the shrimp in the flour mixture, making sure each shrimp is well coated. Fry the shrimp in batches for 2-3 minutes on each side until golden brown and crispy. Remove the shrimp and place them on a paper towel-lined plate to drain excess oil.
  • Make the spicy garlic mayo: In a small bowl, mix together mayonnaise, minced garlic, hot sauce, lemon juice, black pepper, and salt. Stir until well combined, and set aside.
  • Assemble the sandwich: Slice the hoagie rolls in half and spread a generous layer of the spicy garlic mayo on each side. Add fresh lettuce slices, then pile the fried shrimp on top. Drizzle a little more spicy mayo over the shrimp for extra flavor.
