  • 1 pie pan or dish
  • 1 Small Mixing Bowl
  • 1 chopping board

Ingredients
  

  • 6-8 large eggs
  • 1 poblano pepper, chopped
  • 8 strips of bacon, cooked and crumbled
  • 1 ½ cups shredded sharp cheddar cheese
  • 1 ½ cups shredded pepper jack cheese
  • 1 cup cooked ground sausage
  • 1 pre-made pie crust
  • Butter, for brushing the top after baking

Instructions
 

  • Preheat your oven to 400°F.
  • In a small bowl, whisk the eggs until well combined.
  • Place the pie crust into a pie pan, ensuring it is evenly pressed along the bottom and sides.
  • Layer 1 ½ cups of shredded pepper jack cheese across the bottom of the pie crust.
  • Evenly sprinkle the crumbled bacon and cooked ground sausage over the cheese.
  • Pour the whisked eggs into the pie pan, ensuring they spread evenly over the filling.
  • Top the eggs with chopped poblano pepper for a bit of Southern spice.
  • Finish with a layer of sharp cheddar cheese.
  • Bake in the preheated oven for about 30 minutes, checking occasionally to ensure it doesn’t over-brown. The pie is done when it has a golden brown top and is fully set in the center.
  • After removing the pie from the oven, brush the top with butter for a rich finish.
  • Allow the pie to cool for a few minutes before slicing. Serve and enjoy!
