Ingredients
  

  • 6-8 boneless, skinless chicken breasts
  • 1 cup yellow mustard
  • 1 cup Italian bread crumbs
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/4 cup milk
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/2 tsp cayenne pepper
  • Vegetable oil for frying

Instructions
 

  • Prepare the Chicken: Rinse the chicken breasts thoroughly and pat them dry with paper towels. Set aside.
  • Mustard Marinade: Coat each chicken breast generously with yellow mustard. This will add flavor and ensure that the breading sticks well.
  • Egg Wash: In a shallow dish, whisk together the eggs and milk until smooth. Set aside.
  • Flour Breading: In another shallow dish, combine the flour, bread crumbs, Italian seasoning, salt, pepper, onion powder, garlic powder, smoked paprika, and cayenne pepper. Mix well.
  • Coating Process: Roll each mustard-coated chicken breast in the egg wash, then coat it in the seasoned flour mixture, making sure it's fully covered on all sides.
  • Fry: Heat about 1 inch of vegetable oil in a large skillet over medium heat. Once the oil is hot (around 350°F), add the chicken breasts in batches, frying until the crust is golden brown and crispy, about 6-8 minutes per side. Ensure the chicken reaches an internal temperature of 165°F.
  • Rest and Serve: Place the fried chicken on a paper towel-lined plate to drain any excess oil. Let it rest for 5 minutes before serving.
