Whip up a quick, delicious cheesy quesadilla with queso dip and triple cheddar cheese. This easy recipe is perfect for lunch, dinner, or a tasty snack!
8 - 16 Large flour tortillas (as many as you need)
Mexican queso cheese dip (1 generous scoop per tortilla; find my queso recipe below!)
Triple cheddar blend shredded cheese (1/2 to 1 cup per tortilla, or to taste)
Butter (for spreading, about 1 tsp per side of each tortilla)

Spread the queso: Lay a large tortilla flat and generously spread the queso cheese dip over one half of it.
Add the shredded cheese: Sprinkle the triple cheddar blend evenly over the queso-covered side of the tortilla.
Fold it up: Fold the tortilla in half to close, creating a half-moon shape.
Butter it up: Spread a thin layer of butter on the outside of each side of the folded tortilla.
Cook until golden: Heat a skillet over medium heat. Place the buttered quesadilla in the skillet and cook until golden brown on one side, about 2–3 minutes. Flip and cook the other side until equally golden and the cheese is melted.
Serve and enjoy: Slice into wedges and serve warm. Pair it with sour cream, guacamole, or salsa if desired.
