1/2 stick butter
5 tsp cornstarch
2 cups coconut milk
1/4 tsp salt

Make the Roux: In a medium pan over medium heat, melt the butter. Slowly whisk in the cornstarch, creating a smooth paste (roux).
Add Coconut Milk & Seasonings: Gradually pour in the coconut milk while continuously whisking until the roux is fully incorporated. Add salt, pepper, sage, and honey, stirring to combine. Let the mixture simmer for 3-5 minutes to thicken slightly.
Add Hominy: Gently stir in the drained hominy, making sure it’s evenly coated in the creamy mixture.
Cook & Thicken: Lower the heat to a simmer, cover with a lid, and let it cook for about 30 minutes, stirring occasionally, or until it reaches your desired thickness.
