Ingredients
  

  • 1 lb fresh Monterey Jack cheese, cubed
  • 1 lb white American deli cheese, cubed
  • 4 cups whole milk
  • 1 cup hot Hatch green chilis
  • 1 1/2 tbsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp hot Mexican chili powder
  • 1/4 cup diced pickled jalapenos and the juice
  • 3 tbsp cornstarch

Instructions
 

  • Place all ingredients in a slow cooker and whisk together real good to incorporate the cornstarch. Set it to low and let it go.
  • Let the mixture cook for several hours, stirring every 30 minutes.
  • Continue stirring until the cheese is fully melted and the dip reaches a creamy, smooth consistency.
  • Once fully melted, switch the slow cooker to warm to keep the dip hot for serving.
  • Serve warm with tortilla chips, pretzels, or fresh veggie sticks.
