  • 4 cups white sugar
  • 2 cups corn syrup
  • 1 cup water
  • 4 tbsp softened butter
  • 3 tsp vanilla
  • 3 tsp baking soda

  • Prepare Your Pan: Line a large baking sheet with parchment paper or a silicone baking mat, ensuring it covers the surface area for easy removal later.
  • Cook the Sugar Mixture: In a heavy-bottomed saucepan, combine the water, corn syrup, and sugar over medium heat. Stir occasionally until the sugar dissolves. Allow the mixture to reach a medium boil, cooking for about 30 minutes or until it reaches the hard crack stage (around 300°F or 150°C on a candy thermometer).
  • Add the Peanuts: Stir in the salted peanuts and continue cooking for an additional 10 minutes. The mixture will begin to darken, infusing the peanuts with the caramelized sweetness.
  • Incorporate Flavor and Texture: Remove the pan from heat. Swiftly add the softened butter, vanilla, and baking soda. Stir vigorously as it froths and foams, ensuring all ingredients are well combined.
  • Pour and Set: Without delay, pour the hot mixture onto the prepared baking sheet, spreading it out evenly with a spatula. Allow it to cool and harden at room temperature. This should take about 1 - 3 hours, depending on the weather and temps.
  • Break and Enjoy: Once completely hardened, break the brittle into pieces of your desired size. Store them in an airtight container to maintain freshness.
