Quick Fix Chicken & Dumplings

Today, we're sharing a quick and easy version of this beloved dish that will have you enjoying its great taste, comfort, and charm in no time.   • 1 large slow cooker or stock pot

Ingredients
  

  • 1 whole chicken (boiled in about 60 oz water)
  • 32 oz chicken stock
  • 1 bunch of celery (chopped)
  • 1 small onion (diced)
  • 3 small cans of biscuits
  • 1 tablespoon Italian herbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder

Instructions
 

  • Start by boiling the whole chicken in approximately 60oz of water until fully cooked. Once ready, remove the chicken from the pot and allow it to cool slightly. Then, shred the meat off the bones and set it aside.
  • Save all the flavorful broth from boiling the chicken as it will serve as the base for our delicious chicken and dumplings.
  • In a large pot, combine the shredded chicken, chicken stock, chopped celery, diced onion, Italian herbs, salt, black pepper, and garlic back in with the base. Bring the mixture to a gentle simmer over medium heat.
  • While the pot is simmering, open the small cans of biscuits and cut each biscuit into quarters. This will give you bite-sized dumplings that are perfect for this recipe.
  • Carefully drop the biscuit quarters into the simmering pot one by one, stirring gently to ensure they don't stick together. Allow the dumplings to cook for about 10 minutes or until they are cooked through and fluffy.
  • Sometimes the dumplings will dissolve and thicken your juice. If need be add an extra can of biscuits.
  • Once the dumplings are done, give the pot a gentle stir to combine all the ingredients and let the flavors meld together for a few more minutes.
