Ingredients
  

  • Leftover brisket
  • 4 sunny side up fried eggs
  • 4 leaves of sugar loaf endive
  • 8 slices of toasted honey wheat bakery fresh bread
  • Ground Dijon mustard
  • Miracle Whip
  • 1 can of spicy refried beans

Instructions
 

  • Warm up the leftover brisket in a skillet over medium heat until heated through.
  • In another skillet, fry the eggs sunny side up until the whites are set and the yolks are still runny.
  • Spread a generous layer of mayo, dijon, mustard, and spicy refried beans on each slice of toasted honey wheat bread.
  • Lay a leaf of the endive over the spread mixture.
  • Arrange the warmed brisket slices on top of the beans, followed by the sunny side up fried eggs.
  • Serve and enjoy. Top with your favorite salsa if you like.
