Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the oats,raisins, coconut, walnuts, flaxseeds, brown sugar, and salt. Mix until evenly combined.
In a small saucepan, melt the coconut oil over low heat. Remove from heat and stir in the honey and vanilla. Whisk until smooth.
Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
Spread the granola mixture onto the prepared baking sheet in an even layer. Press down firmly all over with a spatula to help it hold together correctly. Bake for 30-45 minutes, until the granola is golden and fragrant. Do not stir.
