  • 2 cups all purpose flour
  • 2 cups sugar
  • 2 large eggs
  • 1 1/2 tbsp vanilla
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup coconut milk
  • 4 large ripe mashed bananas
  • 1 cup chopped walnuts
  • few extra walnuts for topping

Instructions
 

  • Preheat Your Oven Begin by preheating your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper for easy removal.
  • Mix the Dry Ingredients In a large mixing bowl, whisk together the flour, sugar, baking soda, and salt. This ensures that the leavening agents and sugar are evenly distributed throughout the batter.
  • Prepare the Wet Ingredients In another bowl, combine the mashed bananas, vanilla extract, eggs, and coconut milk. Stir until the mixture is smooth and well blended.
  • Combine and Fold Pour the wet ingredients into the dry ingredients. Gently fold them together until just combined. Be careful not to overmix; you want to keep the bread light and fluffy.
  • Add the Walnuts Fold in the chopped walnuts, ensuring they are evenly distributed throughout the batter.
  • Pour and Top Pour the batter into the prepared loaf pan. Sprinkle a handful of extra chopped walnuts on top for a crunchy finish.
