Preheat the ovenPreheat your oven to 350°F (175°C). Grease a 9x13-inch casserole dish with cooking spray or butter.
Prepare the baseUnroll the crescent rolls and press them evenly into the bottom of the prepared casserole dish to form the base. Make sure to pinch the seams together.
Beat the eggsIn a large bowl, whisk together the 8 eggs with a splash of milk. Add salt and pepper to taste. Set aside.
Layer the meatsEvenly spread the chopped mesquite deli turkey over the crescent roll base, followed by the crumbled bacon.
Add the cheesesSprinkle the shredded smoked Gouda cheese over the meat layer, followed by half of the cheddar jack cheese. You’ll have a lovely cheesy, meaty bed for your eggs to soak into.
Pour the eggsPour the beaten eggs over the layers of meat and cheese, making sure to cover all the ingredients. The eggs will soak into the crescent roll base, making it soft and flavorful.
Spread the last half of the cheddar cheese layer on top for that golden crust cheesy finish.
BakePlace the casserole in the oven and bake for 30-35 minutes, or until the eggs are set and the top is golden brown.
ServeAllow the casserole to cool slightly before slicing. Serve warm and enjoy!
