Ingredients
  

  • 2 cups all-purpose flour
  • 1 1/2 cups of granulated sugar
  • A pinch of salt
  • 2 1/2 tsp baking powder
  • 1 large egg
  • 1/4 cup vegetable oil
  • 1 cup milk (or a non-dairy alternative)
  • 4 ripe mashed bananas
  • 1 1/2 cups of creamy honey peanut butter

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the flour, sugar, and a pinch of salt.
  • In another bowl, whisk together the eggs, milk, mashed bananas, and honey peanut butter until smooth and creamy.
  • Gradually add the wet ingredients to the dry ingredients, stirring until just combined (don’t overmix to keep the muffins light and fluffy).
  • Spoon the batter into a greased or lined muffin tin, filling each cup about 3/4 full.
  • Bake for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Let cool for a few minutes, then enjoy warm or at room temperature!
