2 cups all-purpose flour
1 1/2 cups of granulated sugar
A pinch of salt
2 1/2 tsp baking powder
1 large egg
1/4 cup vegetable oil
1 cup milk (or a non-dairy alternative)
4 ripe mashed bananas
1 1/2 cups of creamy honey peanut butter

Instructions
Preheat your oven
to 350°F (175°C).
In a large mixing bowl, combine the flour, sugar, and a pinch of salt.
In another bowl, whisk together the eggs, milk, mashed bananas, and honey peanut butter until smooth and creamy.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined (don’t overmix to keep the muffins light and fluffy).
Spoon the batter
into a greased or lined muffin tin, filling each cup about 3/4 full.
Bake for 12-15 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Let cool for a few minutes, then enjoy warm or at room temperature!
