Ingredients
  

  • 8 corn tortillas
  • 8 slices of honey turkey deli meat
  • 6 large eggs
  • 4 oz cream cheese, softened
  • 1/4 cup picante sauce
  • 3 tbsp oil (for frying)
  • Salt and pepper to taste
  • Optional: Fresh cilantro, avocado slices, or a sprinkle of shredded cheese for topping

Instructions
 

  • Fry the Tortillas:In a skillet, heat 3 tbsp of oil over medium-high heat. Fry each corn tortilla until golden brown and crisp on both sides, about 1-2 minutes per side. Set aside on a paper towel to drain excess oil.
  • Scramble the Eggs:Crack the eggs into a bowl and whisk them with a pinch of salt and pepper. In the same skillet, scramble the eggs until fully cooked, then remove from heat.
  • Assemble the Tostadas:Spread a layer of cream cheese on each fried tortilla. Place 1-2 slices of honey turkey deli meat on top, followed by a scoop of scrambled eggs.
  • Add Picante Sauce:Drizzle a generous spoonful of picante sauce over each tostada for a tangy, spicy kick.
  • Optional Toppings:Garnish with fresh cilantro, avocado slices, or a sprinkle of shredded cheese if desired.
