Ingredients
  

  • 1 can of salmon (drained and flaked)
  • 1 cup diced poblano peppers
  • 2 cups shredded medium cheddar cheese
  • 2 cups panko bread crumbs
  • 1 tablespoon dried basil
  • 1 tablespoon dried dill
  • Juice from 1 lemon
  • ½ teaspoon black pepper
  • ⅛ teaspoon salt
  • 1 egg
  • 1½ tablespoons Red Lobster seafood seasoning

For the Dipping Cream:

  • ½ cup mayonnaise or Greek yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons dill
  • Pinch of salt and pepper
  • 1 clove garlic (minced)

Instructions
 

  • Prepare the Mixture:In a large mixing bowl, combine the drained and flaked salmon, diced poblano peppers, shredded cheddar cheese, panko bread crumbs, dried basil, dried dill, lemon juice, black pepper, salt, egg, and Red Lobster seafood seasoning. Mix well until all ingredients are evenly combined.
  • Form the Balls:Using your hands, form the mixture into small balls, about the size of a golf ball.
  • Fry the Salmon Balls:Heat oil in a deep fryer or heavy pot to 350°F (175°C). Carefully drop the salmon balls into the hot oil, working in batches if necessary. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.
  • Make the Dipping Cream:In a separate bowl, mix together the mayonnaise or Greek yogurt, lemon juice, dill, salt, pepper, and minced garlic until well combined. Adjust seasoning to taste.
