  • 2 cups crushed ginger snaps
  • 1/2 can pumpkin pie filling or puree
  • 2 cups white sugar
  • 2 cups brown sugar
  • 2 cups milk
  • 1 stick softened butter
  • 2 tsp vanilla extract
  • 1 1/2 tbsp pumpkin pie spice

  • Prepare the Base: Begin by crushing the ginger snaps into fine crumbs. Line a pan with a layer of these delightful cookies, creating a flavorful base for your fudge.
  • Create the Fudge Mixture: In a pot, combine the pumpkin pie filling, white sugar, brown sugar, and milk. Cook this mixture over medium heat, allowing it to gently boil for around 30 minutes, stirring occasionally.
  • Cool and Add Flavors: Once the mixture reaches a thickened consistency, remove it from the heat and let it cool down to approximately 110°F. Add in the softened butter, vanilla extract, and pumpkin pie spice. Mix everything thoroughly until well combined.
  • Assemble the Fudge: Pour the fudge mixture over the crushed cookie layer in the pan. For an extra touch, sprinkle a few more crushed cookies on top of the fudge, enhancing both the texture and flavor.
