  • 8 large potatoes, sliced
  • 1 lb ground beef
  • 1 lb baby carrots, chopped
  • 8 oz mixed greens (e.g., turnips, collard greens, mustards)
  • 64 oz water
  • 2 tbsp minced garlic
  • 2 tbsp Badia Complete seasoning
  • 2 tbsp onion powder
  • 2 tbsp dried parsley
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp chicken bouillon

Instructions
 

  • Cook the Ground Beef: In a large stock pot, brown the ground beef over medium heat. Use a spatula to break it up into crumbles as it cooks. Once browned, drain any excess fat and set the beef aside.
  • Prepare the Soup Base: In the same pot, add the water, minced garlic, Badia Complete seasoning, onion powder, dried parsley, salt, black pepper, and chicken bouillon. Stir to combine.
  • Add the Vegetables: Add the sliced potatoes, chopped carrots, and mixed greens into the pot. Stir everything together, ensuring the vegetables are evenly distributed.
  • Simmer the Soup: Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and cover with a lid. Let the soup simmer for 2 to 3 hours, stirring occasionally, until the potatoes and carrots are tender and the flavors have melded together.
  • Final Taste Check: Taste the soup and adjust the seasoning if needed, adding extra salt or pepper to suit your taste.
