Ingredients
  

  • 4 large tilapia fillets, halved
  • 3 cups farro grains
  • 1 ½ cups sweetened coconut
  • 2 cups golden raisins
  • 3/4 cup brown sugar
  • 1 tbsp black pepper
  • 3 tbsp curry powder
  • ½ tsp salt
  • 1 1/2 tbsp onion powder
  • 1 tbsp ginger powder
  • 1 tbsp paprika
  • 2 tbsp dried basil
  • 3 tbsp butter
  • 2 tbsp coconut oil
  • 40 oz seafood or vegetable broth

Instructions
 

  • Prepare the Mixture:
    In a large mixing bowl, combine the seafood stock, brown sugar, sweetened coconut, golden raisins, black pepper, curry powder, salt, onion powder, ginger powder, paprika, dried basil, coconut oil, and butter. Mix well until everything is combined.
  • Prep the Baking Pan:
    Grease a large baking dish or pan with cooking spray or a little coconut oil to prevent sticking.
  • Layer the Ingredients:
    Spread the farro grains evenly at the bottom of the greased baking pan. Place the tilapia fillets on top of the farro.
  • Add the Flavorful Mixture:
    Pour the mixture from the bowl over the tilapia fillets and farro, ensuring everything is well-coated.
  • Bake:
    Cover the pan with aluminum foil and bake in the oven at 350°F for about 1 hour, or until the fish is flaky and the farro is tender.
