  • 1 large casserole or baking pan

Ingredients
  

  • 4 cups whole grain oats
  • 2 cups chopped or halved pecans
  • 1 cup golden raisins
  • 1 1/2 cups fresh blueberries
  • 2 cups maple syrup
  • 2 cups honey
  • 1/8 tsp salt
  • 3/4 cup coconut oil

Instructions
 

  • Preheat your oven to 250°F (120°C).
  • Mix the dry ingredients: In a large mixing bowl, combine the oats, chopped pecans, golden raisins, and salt. Stir until evenly distributed.
  • Add the wet ingredients: Pour in the maple syrup, honey, and melted coconut oil. Stir until the mixture is thoroughly coated.
  • Gently fold in the blueberries, being careful not to crush them.
  • Spread the mixture evenly in a large baking pan. Press down gently with a spatula to press the mixture together good before baking.
  • Bake in the preheated oven for 40 - 45 minutes.
  • Cool and set: Remove from the oven and allow the granola to cool completely in the pan. This will help it to harden and become crunchy. Do not disturb the granola while it's cooling to ensure it stays together.
  • Store in an airtight container only after it has fully cooled and dried out.
