  • 2 large eggs
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup coconut oil (melted)
  • 1 cup milk
  • 2 1/4 cups granulated sugar
  • 1 can (21 oz) blueberry pie filling
  • 1 cup shredded coconut

Instructions
 

  • Prepare the Batter
    In a large mixing bowl, combine eggs, flour, baking soda, baking powder, salt, coconut oil, milk, and sugar. Mix until the batter is smooth and well incorporated.
  • Add the Coconut
    Gently fold in the shredded coconut to distribute it evenly throughout the batter.
  • Incorporate the Blueberry
    Carefully fold in the blueberry pie filling, ensuring you don’t overmix. This step keeps those luscious blueberries intact for a delightful burst of flavor in every bite.
  • Prep the Pan
