Equipment

  • 1 Large Mixing Bowl
  • 1 large muffin pan
  • 1 hand mixer
  • 1 package of muffin liners

Ingredients

  • 1 can of pumpkin (15 oz)
  • 4 ripe bananas, mashed
  • 3 cups all-purpose flour
  • 1 stick of melted butter
  • 1 1/4 cups milk
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tbsp pumpkin pie spice
  • 2 1/2 cups granulated sugar

Instructions

  • Preheat your oven to 375°F (190°C). Line your muffin pans with paper muffin cups for easy removal after baking.
  • Mix the wet ingredients: In a large mixing bowl, combine the mashed bananas and the can of pumpkin. Add in the melted butter and milk, stirring until everything is well incorporated.
  • Add the dry ingredients: To the same bowl, add the flour, baking powder, salt, and granulated sugar. Stir everything together until the mixture is smooth and fully combined.
  • Scoop the batter: Using a spoon or ice cream scoop, evenly divide the muffin batter into your prepared muffin pans.
  • Bake: Place the muffins in the oven and bake for about 15 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and enjoy: Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack. Enjoy warm or store for later!
