Equipment

  • 1 Large Mixing Bowl
  • 1 hand mixer
  • 1 large 9 x 13 baking pan

Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 large eggs
  • 1 tbsp vanilla extract
  • 3 cups granulated sugar
  • 1 stick (1/2 cup) melted butter
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups whole milk
  • 2 cups fresh blackberries
  • 1 (15 oz) can applesauce

Instructions

  • Preheat the oven: Set your oven to 400°F (200°C) and let it heat up while you prepare the bread.
  • Prepare your pan: Grease a large 9 x 13 baking pan with butter or cooking spray. Lightly dust the pan with flour, shaking off any excess into the trash.
  • Mix the ingredients: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk in the eggs, vanilla extract, melted butter, and whole milk. Mix well until everything is smooth and combined.
  • Add the applesauce: Stir in the can of applesauce until fully incorporated into the batter.
  • Add the blackberries: Gently fold in the fresh blackberries, taking care not to crush them.
  • Bake the bread: Pour the batter into your prepared 9 x 13 pan. Spread it evenly, then place it in the preheated oven. Bake for about 1 hour, or until the bread is golden brown and a toothpick inserted into the center comes out clean.
  • Cool and slice: Once baked, remove the bread from the oven and let it cool for about 10 minutes. Slice it down the middle into two halves, then cut each half into generous slices.
  • Serve: Serve the bread as-is or with a warm cup of tea or coffee for the perfect treat! Enjoy the sweet, fruity goodness in every bite.
