Equipment

  • 1 round cake pan
  • 1 hand mixer
  • 1 Large Mixing Bowl

Ingredients
  

  • 1 can pears, chopped
  • 1 can chopped pineapple
  • 2 cups flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp vanilla
  • 1/2 cup coconut oil, melted
  • 2 large eggs

Instructions
 

  • Preheat your oven to 375.
  • Mix all dry ingredients in the large bowl.
  • Now add the eggs, vanilla, and oil to the dry mix and mix thoroughly.
  • Add the chopped fruit and mix once again gently.
  • Pour the mixture into your greased cake pan and put it in the oven to cook.
  • Check it about 45 minutes to make sure the top is not getting to brown. If it is, cover the top with foil for the last 15 minutes of cooking.
  • Once done, remove it from the oven and let it cool for at least 1 hour.
  • Once it is cooled down, cut a slice right down the center to make it into two loaves.
  • Now cut it up into slices and store in your favorite airtight dish or ziploc bags.
