Equipment

  • 1 Large Mixing Bowl
  • 1 loaf pan
  • 1 hand mixer

Ingredients

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup warm water (about 110°F)
  • 2 large eggs
  • 2 cups whole mixed greens ( chopped and stems removed )
  • 8 oz shredded pepperjack cheese
  • 1/2 cup diced or chopped banana peppers (fresh or pickled)
  • 2 tbsp sugar (optional, for a touch of sweetness)
  • 1/2 tsp black pepper
  • 1 tbsp vegetable oil

Instructions

  • Preheat the Oven & Prepare the Pan:Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper for easy removal.
  • Mix Dry Ingredients:In a large bowl, whisk together the flour, salt, baking soda, and baking powder.
  • Prepare Wet Ingredients:In another bowl, whisk the eggs and add the warm water (around 110°F). Stir in the honey or sugar (if desired) and black pepper.
  • Combine the Dough:Add the wet ingredients to the dry ingredients, stirring until a thick dough forms. Make sure the dough is mixed well, but don’t overwork it.
  • Incorporate the Greens and Peppers:Fold in the mixed greens and chopped banana peppers into the dough.
  • Layer the Dough and Cheese:Take half of the prepared dough and place it into your greased loaf pan, spreading it evenly along the bottom. Once the dough is spread out, sprinkle 8 oz of shredded pepperjack cheese over the middle, creating a cheese layer right in the center.
  • Top with the Remaining Dough:Spoon the remaining dough on top of the cheese layer and spread it out to cover the cheese completely. This creates the stuffed cheese middle that will melt and ooze as it bakes.
  • Bake the Bread:Place the pan in the oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the bread comes out clean. The cheese in the center will be perfectly melted and gooey.
  • Cool & Slice:Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack. Once cooled, slice the bread into thick pieces and serve.

Notes
