Our Southern Breakfast Skillet Hash is a mouthwatering combination of ingredients that will leave you satisfied and energized for the day ahead. Packed with wholesome goodness, this dish brings together crispy bacon, fried red potatoes, eggs, endive, avocado slices, jalapeno juice, hot sauce, and cheddar cheese.

Let’s delve into the benefits of these ingredients and explore the Southern flair that makes this breakfast dish truly special.

The Benefits of the Southern Breakfast Skillet Hash Ingredients:

1. Red Potatoes: Rich in fiber and packed with essential vitamins and minerals, red potatoes provide a nutritious base for our skillet hash. They also offer a good source of carbohydrates to fuel your morning activities.

2. Crispy Bacon: While indulging in bacon may not seem like the healthiest choice, moderation is key. Bacon adds a savory element to this dish and provides protein to keep you feeling full throughout the morning.

3. Eggs: Eggs are a nutritional powerhouse, offering an excellent source of high-quality protein, vitamins, and minerals. They also contain beneficial antioxidants like zeaxanthin and lutein that support eye health.

4. Sugar Loaf Endive: Adding a touch of freshness and crunch to our skillet hash, sugar loaf endive is a nutrient-dense leafy green that is rich in vitamins A and K. It also contains dietary fiber for improved digestion.

5. Avocado Slices: Avocados contribute heart-healthy monounsaturated fats, which can help lower bad cholesterol levels. They also provide essential vitamins and minerals while adding a creamy texture to the dish.

6. Jalapeno Juice and Hot Sauce: These spicy additions not only enhance the flavor profile but can also boost metabolism due to capsaicin, which may aid in weight management and provide potential pain relief.

7. Shredded Cheddar Cheese: Cheddar cheese adds a delightful gooeyness to the skillet hash. It is a good source of calcium and protein, making it a tasty addition to support bone health.

Equipment

  • Large Skillet
  • 1 Spatula
  • 1 Chopping Knife

Ingredients

  • 4 large red potatoes, diced and fried
  • 6 leaves of sugar loaf endive, chopped
  • 2 tablespoons jalapeno juice
  • 2 tablespoons hot sauce
  • 8 eggs
  • 8 strips of cooked bacon, crumbled
  • Cheese for topping
  • 2 avocados, sliced

Instructions

  • Begin by frying the diced red potatoes until they turn golden brown. This will give them a crispy texture and enhance their flavor.
  • Once the potatoes are nicely fried, add the sugar loaf endive to the skillet. Give it a good mix with the potatoes and allow it to cook for a few minutes, allowing the flavors to meld together.
  • Next, drain any excess oil from the skillet and add the jalapeno juice and hot sauce. These ingredients will add a delightful kick to your breakfast hash.
  • Now it's time to add the remaining star ingredients – crack open the eggs and gently pour them over the potato and endive mixture. Scatter the broken-up bacon on top as well and mix well. Cover the skillet and let it cook on low heat for about 15 minutes. This will ensure that the eggs are perfectly cooked without becoming overdone.
  • Once the eggs are set to your liking, sprinkle some cheese over the top of the hash. Cover the skillet again and let it melt for a few more minutes. The melted cheese will add an extra layer of deliciousness to your breakfast.
  • Finally, remove the skillet from heat and serve your Southern Breakfast Skillet Hash with a generous topping of sliced avocados. The creamy avocados will provide a refreshing and buttery contrast to the savory flavors of the dish.
