Cheesy Beef Layered Enchilada Casserole

I'm going to share with you a delightful twist on traditional enchiladas - the Cheesy Beef Layered Enchilada Casserole. Made with lean ground beef, shredded sharp cheddar cheese, diced onions and bell peppers, white corn tortillas, and a generous amount of homemade enchilada sauce, this casserole is sure to satisfy your taste buds and become a new favorite in your kitchen!

Equipment

  • 1 9 x 13 Casserole Dish
  • 1 Large Skillet
  • 1 Large Spoon

Ingredients
  

  • 1 lbs ground beef or turkey
  • 2 lbs shredded cheddar or mexican cheese
  • 2 15 oz cans red enchilada sauce
  • 1 large bell pepper, diced
  • 1 large onion, diced
  • 1 package white corn tortillas

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  • Add the diced onions and bell peppers to the skillet and sauté until softened.
  • Stir in half of the enchilada sauce to combine with the beef mixture.
  • In a separate bowl, warm the corn tortillas in the microwave for a few seconds to make them pliable.
  • In a greased 9 x 13 casserole dish, spread a thin layer of enchilada sauce on the bottom.
  • Place six tortillas on top of the sauce, slightly overlapping them.
  • Add half of the beef mixture on top of the tortillas, followed by a generous sprinkle of shredded sharp cheddar cheese.
  • Repeat the layers, starting with the tortillas, until all ingredients are used, finishing with a layer of cheese on top.
  • Bake for about 35 -45 minutes in the oven covered with foil.
  • Remove the foil for the last 10 - 15 minutes to get the top a little crispy.
  • Remove from oven and let cool for 10 minutes before cutting and serving.
