Cheesy Beef Enchilada Bake Recipe
Equipment
- 1 large casserole dish
- 1 Large Skillet
- 1 Large Spoon
Ingredients
- 1 lbs ground beef or turkey
- 2 lbs shredded cheddar or mexican cheese
- 2 15 oz cans red enchilada sauce
- 1 large bell pepper, diced
- 1 large onion, diced
- 1 package white corn tortillas
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add the diced onions and bell peppers to the skillet and sauté until softened.
- Stir in half of the enchilada sauce to combine with the beef mixture.
- In a separate bowl, warm the corn tortillas in the microwave for a few seconds to make them pliable.
- In a greased 9 x 13 casserole dish, spread a thin layer of enchilada sauce on the bottom.
- Place six tortillas on top of the sauce, slightly overlapping them.
- Add half of the beef mixture on top of the tortillas, followed by a generous sprinkle of shredded sharp cheddar cheese.
- Repeat the layers, starting with the tortillas, until all ingredients are used, finishing with a layer of cheese on top.
- Bake for about 35 -45 minutes in the oven covered with foil.
- Remove the foil for the last 10 - 15 minutes to get the top a little crispy.
- Remove from oven and let cool for 10 minutes before cutting and serving.
